Risotto with Italian Sausage, Caramelized Onions, and Bitter Greens

This recipe is one of my Husband's favorites using turkey sausage as lean protein.  It is hearty yet light in calories and packed with protein.  This dish harmonizes sweet and bitter flavors together sure to please your taste buds!

***Tip:  Double the recipe.  You may want to have left overs for a great lunch the next day! 
***At my local grocery stores, I am only able to find the arugula in large containers and you will only need a small portion for the recipe.  Use the left over arugula and mix it in with your leafy greens to make salads for the week.
